The History

The olive tree and its end product, oil, have played an important role in ancient civilisations, and have always been reserved for the highest classes as a luxury item.

From the Roman Empire in Hispania, Baetica was the main olive oil producing province for centuries. The production centre was located along the river Guadalquivir, as it is today. And the meaning of Oleum Excelsus comes from the Romans, which they called “Sublime Oil”.

Extra Virgin Olive Oil (EVOO) has come a long way from the time in which the Romans used it as medicine. Today it is used by prestigious chefs to make the finest gourmet dishes, and is included in several scientific studies describing its properties.
